Maggie requested I make “green tea cookies”. I had no idea what to do but tracked down a Green Tea Shortbread Cookie recipe and made 4 dozen.
How about making some Anzac biccies? I love these with tea. If they turn out crunchy, they are great for dipping.
1 Cup (125g) plain flour
2/3 Cup sugar
1 Cup rolled oats (or instant oats)
1 Cup (90g) desiccated coconut
125g butter
1/4 Cup golden syrup (or honey)
1/2 tsp bicarb soda
Preheat oven to 180 C
Sift flour and sugar in a large mixing bowl
Add oats and coconut and make a well in the center
Put butter and syrup in a small pan – stir over low heat until melted and smooth
Dissolve the soda in 1 Tbl boiling water then add immediately to the butter mixture, it will foam up instantly.
Pour into dry ingredients, stir with a wooden spoon
Drop level tablespoons of mixture onto tray
Flatten gently with your fingers, leaving more room for spreading
Bake 20 minutes or until just browned
Remove from oven and transfer to wire rack.
